Which red handle? On the wringer metal lever? Or on the bucket top rear?

@@Acemart Thank you so much for your help Ace Mart! I just wanted to make sure before I spend more money on another induction cooker that isn't what I'm looking for so I appreciate the info. Many other induction cooktops that I've used before said they fit pans up to 10.5" too, but when you boil water in a pan that large you only see a 5-6" circle in the middle from the actual heating element.

@@JacksonWalter735 Hey there Jackson, our Vollrath rep has contacted us. He said this question was interesting and that he spoke to their head corporate chef. He says that the key to better heat distribution is a quality pan. Burners/ induction coils don’t send heat to the edge of the pan and it’s the cookware itself that should. That being said, the coil size is 8” diameter but is rated to distribute even heat on a quality 10-1/4” pan. Let us know if there’s anything we can do!

@@Acemart Thanks for letting me know Acemart rep! I appreciate it. At my mother's restaurant we use both sizes of the Chef's Supreme carbon steel pans that we also got from Acemart. I've also tested a few of my DeBuyer carbon steel pans and a few of my cast iron skillets on that Avantco portable induction range as well and those still have the 5-6" heat ring (better with tri-ply clad cookware though, but the crepes and omelettes we make stick to that). If the heating element is indeed 8" on this Vollrath Mirage then I think that should be good enough. I'll inform my mother and we'll swing by Acemart to pick one up as an extra portable burner for brunch service. Again thank you so much for helping me out. You went above and beyond what I expected when I initially commented on this video. I appreciate it.

On average, filled ice tubes last maybe 2-4 hours in dispensers before ice begins to melt. There’s no specific time rating but that’s would be a good average time. Aside from that, the tube itself should yield longer overall use :) Thanks for watching!

My bad! This machine is super simple to use: 1. After machine is clean and staged for use, fill the middle of the spinner head with floss sugar. 2. Turn on the heat and spin switches I no the front of the unit. 3. Adjust heat knob depending on how fast you need to produce. 4. Grab cotton candy from the interior pan/net and serve! -Fernando from Ace Mart
